This recipe is a favourite in our family. It is so simple to make but it elevates humble ingredients to something delightful. Drizzle mint sauce over vegetarian sausages; toss with new potatoes; mix with chickpeas; use it as a salad dressing… it makes everything zing. You won’t look back.
- 3 garlic cloves
- 4 tsp soft brown sugar
- ⅓ cup mint leaves
- ¼ cup malt vinegar
- 1 tsp salt
- ½ cup light olive oil
- 1 Put all ingredients into a blender, except oil. Blend while slowly adding the oil until dressing thickens.
- 2 Check and adjust salt, sugar, vinegar to taste if required.
