On the cover of Easy Vegan is a gorgeous Tomato and Ricotta Galette; one of six ideas for pastry found near the back of the book, including Wild Mushroom Galettes, Zucchini and Herb Galettes, Asparagus and Garlic Galettes, Spinach and Capsicum Quiche and Beetroot Galettes. I’ve never made a galette before, but I certainly plan to, because they invariably look stunning and their rustic edges make them seem so easy to prepare. In fact, I’d say that’s what Easy Vegan achieves with aplomb: a recipe book comprising pages of beautiful, simple vegan food.
This is a soft-cover book with matte pages and a colour photo for every recipe. It has helpful resources at the start of the book covering the whats and whys of veganism, plus a little bit of celebrity vegan inspiration. Following those openers, Easy Vegan is organised into Basics; Brunch; Starters and Light Bites; Soups and Cold Salads; Warm Salads and Sides; Pasta, Rice and Noodles; Warming Mains; Sweet Things; and Menu Planner.
The cover also features the words “140 vegan dishes, from everyday to gourmet”, which is also a big drawcard for this cookbook. In the few weeks we’ve had the book, I’ve prepared eight of the recipes with ease, all on busy work nights. The “Eggs Benedict” made with tofu, and a homemade Hollandaise sauce makes a great Sunday morning brunch. Eggplant Adobo Stew was easy to prepare and packed with flavour; it tasted even better as lunch the next day served with couscous.
There’s also several semi-raw or fully raw recipes, including the Sprouted Salad, Radish Ceviche, Watermelon and Coriander Salad, plus several great smoothie ideas.
The sweet section we haven’t dipped into yet, but all in good time. And you’d better believe I’ll be starting with the Crème Brûlée … okay maybe the gorgeous Orange and Olive Oil Syrup Cake. And definitely the Pistachio Cake. Well, you get the idea.
This cookbook is bursting with delicious recipes, not all for the calorie-conscious, but plenty for the flavour-conscious. This will suit new vegans, seasoned vegans, and people just wanting a few vegan meals every now and then. It’s a crowd-pleaser with all the trimmings.
